Pioneer Village Sweet Chicken

This recipe has been with us for 10 years and was developed by a staff person who was with us. It has become the most favorite of all the recipes we use at the village and the one most often requested by our staff for special occasions. It translates well into 20th century and we hope you will enjoy it as much as we do!

1 medium chicked, washed

2 tablespoons cooking oil

4-5 apples, cored and quartered with skin on

1 cup of raisins or currants

1/2 cup cider vinegar

1 cup sugar

 

Water to cover chicken

Heat your oil in the pot over the fire, add chicken and brown it nicely on all sides. Add apples, raisins, vinegar, sugar and water to cover all. Simmer over the fire for 1 hour stirring occasionally. Remove chicken from pot to deep serving dish. Serve portions with the sauce of apples and raisins over it. Delicious!

For those who do not wish to deal with bones, use boneless chicken. Two pounds will make a great dinner and cook it over a medium heat on the stove.
